One book that has served me well as an introduction to discourse is Martin Bygate's "Speaking," published by OUP.

My vote for a highly readable overview goes to Hutchby, I. and Wooffitt, R. 1998: Conversation Analysis: Principles, Practices, and Applications. Oxford: Blackwell.
